Impossible Pie
I found this recipe in an old cook book and found it to be super easy and delicious.

Its name comes from the fact that it sorts itself out into 3 layers- a base, soft centre and a crunchy crust. Give it a go, you won’t be disappointed.




INGREDIENTS

½ cup plain flour
1 cup castor sugar
1 cup desiccated coconut
4 eggs, lightly beaten
2 tsp vanilla essence or vanilla sugar
125g melted butter
2 cups milk


METHOD

Lightly grease a straight sided 24cm pie dish. Sift the flour into a bowl and stir in the sugar, coconut, eggs, vanilla, butter and milk.

Pour into the prepared pie dish and bake in a moderate oven (180C) for 45 minutes or until lightly browned and set.

You may serve this warm or cold with fruit, cream or icecream
