Fried Herb Bread



Do you have left over bread that you don’t know what to do with? Whether it is a loaf or sliced bread, here is a delicious way to use up day old bread, as this recipe works best with old bread.

INGREDIENTS

¾ loaf of bread cut into 1cm thick slices. (Cut them into any shape you like)
2 tablespoons flour
½ cup water
2 eggs
¼ teaspoon paprika
¼ teaspoon black pepper
¼ teaspoon chilli flakes (more or less to taste)
1 teaspoon dried oregano
1 teaspoon salt
Oil for frying

METHOD

In a bowl, mix together the flour and water until smooth. Add the eggs and all the spices. Mix well.
Heat some oil in a heavy based pan. Dip the bread pieces on both sides into the egg mixture and then place into the pan, Fry the bread until golden on both sides.

Serve immediately.

This bread is lovely with a side salad of tomato, cucumber, feta cheese and spring onion.
