WALNUT AND DATE MARBLE CAKE
INGREDIENTS
1 cup sugar
3 eggs
1 cup yogurt or milk
1 cup vegetable oil
1 tsp vanilla essence
3 cups Self Raising flour
1 cup chopped dates
¼ cup cocoa
½ cup chopped walnuts
METHOD
Beat the sugar and eggs until light and fluffy. Gradually add the milk/yogurt and then the oil. Add the vanilla essence then add the flour 1 cup at a time and mix until well combined.
Take out one cup of the mix and put aside. To the rest of the mixture add the chopped dates and stir through.
Pour this mixture into a well greased oven tray. To the mixture you put aside add the cocoa and another tablespoon of milk to combine the cocoa.
Swirl spoonfuls of cocoa mixture around the top of the cake giving it a marbled effect.
Then using a butter knife, and without scraping the bottom of the tray, again swirl so that the white mixture goes to the top and the cocoa mixture goes to the bottom, so there is a marbling throughout the cake.(Be careful not to over do it!)
Sprinkle the top with the chopped walnuts and bake in a moderate oven for 45 minutes, or until a skewer comes out clean.
Enjoy this deliciously moist cake with a dollop of cream, some chocolate sauce or just on its own.
