Date & Walnut Cake
Perfect with Tea
You will need:

1/2 cup dates, pitted and chopped
1/2 cup walnuts, chopped
2 1/2 cups all purpose flour
1 cup powdered sugar
3/4 cup brown sugar
1/4 cup white sugar
1/2 cup butter or butter flavored Crisco
1 2/3 cup milk
4 eggs
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. cloves
1/2 tsp. nutmeg


Method:

1. Grease and flour a circular cake tray 30 cm. in diameter approximately
2. Mix the chopped dates and walnuts with 1/4 cup of the flour
3. Mix the brown sugar, white sugar, cinnamon, cloves and butter or Crisco. Add the milk and continue to beat, adding the eggs one at a time. (mix not blend).
4. Mix the remaining 2 1/4 cups flour with the baking powder and baking soda and add to the batter.
5. Fold in the floured dates and walnuts and mix together.
6. Transfer the cake mix into the pan and bake in a preheated oven on 350 degree F or 180 degree C. Bake until a toothpick inserted into the  middle of the cake comes out clean.
7. Sprinkle with powdered sugar.


Tips:
1. Flour is added as a coating for the dates and walnuts to keep them from sinking to the bottom of the pan during baking.
2. For even and beautiful powered sugar coating, add sugar to a fine strainer and shake over the cake.
