Don’t the specialty cakes in cake shops look absolutely gorgeous and after you pay a ridiculous amount of money you tend to find that they didn’t taste as good as they looked.
Although there are delicious cakes out there (I’m not denying that), they are expensive. Here is a cake that not only looks great but tastes fantastic and you can make it at home.
Easy Chocolate Cake
1 2/3 cup plain flour
1 ¼ cup caster sugar
2/3 cup cocoa
1 ½ tsp bicarbonate soda
1 ½ cups of milk
125gr soft margarine
2 eggs
1 ½ tsp vanilla essence
Pre heat the oven to 180 C.
Throw all ingredients into a bowl, that’s right you heard me and mix with an electric mixer until smooth.
Pour mixture into a greased cake pan and bake for 45 minutes, or when inserted with a skewer, the skewer comes out clean.
Let the cake cool.
If you wish to have a filling beat a cup of cream until stiff. Fold in half a packet of your favourite chocolate covered biscuit (crushed). Split the cake in two. Place a thick layer of the cream and chocolate biscuits and sandwich the two halves together.
Choc Topping
4 tbls icing sugar-sifted
4 tbls cocoa-sifted
2 tbls margarine
2 tbls milk
Mix all the ingredients until smooth and creamy.
Smear all over the top and sides of the cake.
You may leave it like this and just sprinkle some shredded coconut, but if you want something a little more special, whip a cup of cream. Spoon the cream into a piping bag. Now use your imagination and make swirls and patterns. To finish it off I have added some sliced almonds and curled chocolate.
