POACHED EGGS IN TOMATO SAUCE
I love this dish because you can make it as healthy or indulgent as you wish. With only a couple of ingredients you will see what I mean.
Ingredients
1 or 2 tomatoes per person
1 egg per person
Salt and pepper to taste
Butter if desired
Method
Peel your tomatoes and finely chop them. Add to a frypan (no oil) and sauté on medium heat until just cooked. Add salt and pepper to taste. Now, if you are weight conscious, do not add any butter. However, if you want to indulge a little, add a knob of butter to your tomato. This will really intensify their flavour.
Crack your egg in the middle of your sautéing tomatoes. Close the top of your saucepan with a lid and poach your eggs until the desired consistency. If you like your eggs runny do not leave them too long. Test with a skewer if desired.
Serve this with toast wedges. You may bring the frypan straight to the table, or serve onto individual plates.
VARIATIONS
Sauté one finely diced onion and some capsicum before adding the tomatoes.
If you would like to make this into a main meal, add some minced meat after the onions.
