Pikelets With Yeast


Out of all the breakfasts I could make for my children, pancakes and pikelets are their absolute favourite. You will not be disappointed with this pikelet recipe. They are light and fluffy and can be served with any sweet or savoury topping.


Ingredients

2 tablespoons dry yeast
1 tablespoon sugar
2 cups warm water
3 cups plain flour
1 teaspoon salt
¼ teaspoon bicarbonate of soda blended with 2 tablespoons cold water
1 egg white lightly whisked

Method

In a large mixing bowl, mix the yeast and sugar with the warm water. Sift the flour and salt into the bowl and beat well until smooth.
Cover with a cloth and leave in a warm place for 30 minutes, or until mixture rises.
Mix in the blend of bicarbonate and water, and then add the lightly beaten egg white. Mix until you have the consistency of thick pouring cream. (Add more water if necessary)

Lightly grease a heavy based pan and heat until a drop of batter sizzles upon contact.
Drop tablespoonfuls of the batter into the pan (according to the size desired) and cook until the top is dry. Turn with a palette knife and cook the other side until lightly browned.
Repeat with the remaining batter.

My kids love these with golden syrup, honey and cream, chocolate spread, cream cheese, peanut butter, in other words all the spreads are taken out of the pantry and they help themselves.
