Glazed Sultana Muffins
Wet Ingredients
½ cup melted butter
1 lightly beaten egg
1 cup milk
Dry Ingredients
2 cups Self Raising flour
½ teaspoon baking powder
½ cup sugar
1 teaspoon cinnamon
1 cup dry sultanas or currents
To glaze: 2 tablespoon apricot jam, 1 tablespoon orange juice
Method
Pre heat the oven to 180 C (moderate oven)
Mix all the wet ingredients together.
In another bowl, sift the Self Raising Flour, baking powder and cinnamon. Add the sugar and sultanas.
Pour in the wet ingredients and mix until just combined.
Divide into lightly greased muffin tins and bake for 20-25 minutes or until golden and cooked in centre.
To give them a lovely gloss, heat together the jam and orange juice and brush on to warm muffins.
Serve with butter, jam or just on its own.
