CITRUS AND COCONUT SYRUP CAKE
Try this deliciously fresh cake! The combination of orange and coconut is simply divine. Serve with a scoop of ice-cream and watch your family and friends be bedazzled by the taste.
Syrup
2 cups white sugar
2 cups water
2 oranges
Peel or gently grate the zest of the oranges. Put aside.
In a pot place the sugar, water and juice of the oranges. Boil for 10 minutes and then put aside to let cool.
Cake
4 eggs
¾ cup sugar
1 cup vegetable oil
1 cup milk
½ cup semolina
2 cups self raising flour
1 cup desiccated coconut
Zest of two oranges (from above)
Beat the eggs and sugar until frothy (this is a very important step and will determine the lightness of your cake).
Slowly add the oil and milk. Then add the flour, semolina, coconut and orange zest and mix until smooth.
Pour batter into a baking tray and bake at 180 C for 35 minutes or until skewer comes out clean when inserted into cake.
Let the cake cool for 10 minutes. Cut the cake into the desired shape and size.
Pour the cold orange syrup over the cake and let absorb for at least 2 hours (more if possible) Sprinkle with extra coconut if desired.
